Car for sleeping in comfortably.

I was originally going to buy a cheap van and converting it into a camper, But then I found out that Insuring a van in the UK (For a first time driver) is extremely expensive here in the UK.I desperately need a vehicle that I can comfortably sleep in. I think a car is my only option right now insurance wise. I'm going to be doing a lot of travelling back and forth from my home to somewhere else in the UK for about 3 days to a week at a time. I simply cannot afford hotels or anything of the sort so I thought I'd just live for a couple of days a month in my car. I'm going to sign up to the towns local gym so showering ect isn't a problem - lol.I'm not too worried about being TOO comfortable. I would say I'm a fairly hardy person however, Still looking for the best options for me.I'm looking forMost importantly, A cheap used car thats cheap to insure for a new driver.A car that'd be spacious. Something where I could store some clothing / gas stove and most importantly something that I could maybe fold the back seats down and maybe fit some type of bedding inside (if possible)?Spacious as possibleCheap to run.I'm not too smart with cars, this may be a big ask but I literally have no choice what so ever.
